What is IG Bas?

While many people living with diabetes are familiar with the Low GI, more and more perfectly healthy people are interested in it.

Why ? Because excess blood sugar (blood sugar) fatigue, contributes to weight gain, can make you sick. At Elsy, we are convinced! 👍

✨ Low GI
= less blood sugar (glycaemia)
= less production of insulin, the hormone that regulates blood sugar (>1gr/l) and stores excess fat

👏 Benefits:
- Less fat stored in fat cells
- No more cravings thanks to the stability of blood sugar
- No frustration thanks to the many pleasure recipes with a low GI
- Better sports performance, especially endurance
- Cardiovascular protection.

A bit of theory:

The reference GI is glucose, its value is 100.

The impact of a food on blood sugar is always compared to the impact of glucose. The Elsy Noir marbles have a GI of 32, which means that the increase in blood sugar is 32% of the increase in glucose, therefore 3 times less.

The lower the GI, the less the blood sugar is affected.

GIs are classified into 3 categories:

  • First, the low GIs: < 55,
  • Then, the average GIs: from 56 to 69
  • Finally, the high GIs: from 70 to 100


And in practice?

You can find the GI of most raw ingredients on the internet. Ok, it's not easy to learn the food GI by heart, but you can bookmark this page or take a picture to always have it on you before shopping 🛒!

An example of a table with some sugars, because you can taste sugar and have a different GI:

  • First, the low GIs: Agave syrup (15), Acacia honey (35)
  • Then, the medium GIs: Maple syrup (60), jam (66)
  • Finally, the high GIs: White or brown sugar (70)

But beware ! The GI of an ingredient changes if the ingredient is cooked or processed. ⏳ So at home, prefer cooking at low temperature and al dente which has the least impact on the GI.

At Elsy, we use very little processed ingredients and our recipe contains fibre, because the presence of fiber in a food reduces its glycemic index.
