Arnaud, why did the jury select ELSY as the winner of the Prix Sucré 2022?
We found in Elsy a real innovative proposal concerning a highly competitive sector where the players already present only offer a caloric, plethoric offer with a problematic composition at the public health level.
The idea of offering a low glycemic index corresponds to a real awareness of the importance to be given to a pleasure offer which is not just a collection of stuffy elements but a sense of innovation by incorporating legumes, responsible cocoa and oligofructose from chicory.
You were particularly surprised by the presence of Oligofructose. Why and what do you think of this "ingredient"?
I find it beneficial to keep the gourmet pleasure by associating a smoothing effect on the consumer's blood sugar. There is no sudden rise in the sugar level but on the contrary a sweet proposal limiting the reaction rise of insulin which can trigger sudden drops in the sugar level with the risk of endlessly multiplying food intake and therefore snacking .

Oligofructose is original in that it is a prebiotic and therefore a nutrient for our digestive flora. This is the first time a confectionery product has offered this. So we can almost speak of a health effect, which is very innovative for such a range of gourmet products. By eating it, you feed your intestinal microbiota and make good bacteria grow. It needs to be done!
